Cream Soda Cupcakes with Cara-Cara Orange Icing


  • 1 box of Yellow cake mix (your preferred brand) 
  • 3/4 cup non-flavored varietal Olive Oil 
  • 3/4 cup of 7UP
  • 4 eggs

For icing: 

  • 1 cup butter, room temp. 
  • 3 cups powdered sugar 
  • 2 TBS heavy cream 
  • 2 TBS Cara Cara Orange Vinegar 
  • 1 disposable pastry bag 

Combine all ingredients into a large mixing bowl and mix with an electric mixer until well blended, about 90 seconds. 

Pour into muffin pans and bake at 350 degrees for 18-20 minutes. 

For the Cara Cara icing, whisk together 1 cup of room temperature butter, 3 cups of powdered sugar, 2 TBS of heavy cream and 2 TBS of Cara Cara Orange Vinegar. 

Scoop into a pastry bag with tip and top each cupcake. 

Serve lightly refrigerated or at room temp, either way your guests are guaranteed to enjoy this yummy treat with a fun Florida twist!
