Yellow Squash Parmesan Boats

Ingredients: 

  • 2-3 Yellow Squash 
  • Tuscan Herb Olive Oil
  • 1/3 cup of shredded Parmesan cheese 
  • Salt & Pepper, to taste  

Wash yellow squash and quarter-cut lengthwise to make 4 boats from each squash. 

In a bowl, toss the squash boats with the Tuscan Herb Olive Oil and salt. 

Lay the squash boats out individually on a sheet pan. Sprinkle each with Parmesan cheese. 

Bake at 350 degrees for 15 minutes until tender. Broil for 1 minute to brown/crisp cheese. 

Serve immediately while warm and enjoy!
